Nothing. I did nothing. I took the SATs with no prep and scored mildly high then waxed my skiis in anticipation. You couldn't do that today. You'd need to have something: athletics, music, job, specialized knowledge and probably higher SAT scores than I did.

First, be an in-state student. The bills are a ton cheaper. Write a good essay and get it in ASAP. With rolling admissions, you can subit by October 15th and here the admissions decision by Thanksgiving...and it's not binding. Also by getting it in earlier you aren't compared to as many students who also have already got their applications in.
